Quiche Lorraine

Here are some things to change in order to cook it french way :)
- Do not boil the bacon, cook it in a pan for 5 mn and throw fat away
- Add milk to double cream, half of each
- Fill the pan this way : first the bacon, then the mixture and Comté cheese at the end
(Comté cheese is more tasty than Gruyere cheese - Comté is French made, Gruyere is Holland made)
I don't know about quantities, it's just up to you, the funny thing it to make not too much mixture :)

Mussels Marinières (French traditional way)
Served two :
1.5 kg of mussels
2 garlic cloves
parsley - as much as you like
a few thyme
2 bay leaves
1 shallot
1 small ognion
1 white wine glass (Muscadet style or Chardonnay)
My mum use to cook them this way :
First add some olive oil in the pot, then add mussels, cover and let cook for 5 minutes
then add garlic, parsley, shallot, ognions and herbs
add white wine at the end
let cook again for 5/8 minutes
serve with french fries & mayonnaise
